Syllabus

Course Objectives


The course aims to provide students with basic knowledge of food hygiene, the factors that help prevent food contamination and foodborne diseases, the treatments that control the presence and growth of microorganisms during food production processes, and the principles of food legislation.
In addition, the course aims to equip students with the tools to identify and assess the role of nutrition in the prevention of certain non-communicable chronic diseases, such as cardiovascular diseases, diabetes, and cancer.

Course Prerequisites


The student must have basic knowledge of microbiology.

Teaching Methods


The course is structured in 3-hour lectures according to the academic calendar. The lessons include a strong interactive component between the instructor and the students.

Assessment Methods


Oral exam: The student must demonstrate their preparation by discussing clearly and in an organized manner the topics requested by the instructor.The evaluation will be conducted using a grading scale out of thirty.

Contents


The course will provide basic knowledge of epidemiology and prevention of both communicable and non-communicable foodborne diseases. It will also examine the mechanisms of contamination in plant- and animal-derived foods in order to implement appropriate prevention strategies, and will cover the principles governing regulatory aspects of food safety.
