Syllabus

Course Objectives


At the end of the course the student knows the processes and the compositional characteristics of the main foods of the Mediterranean diet, the food processing processes and how these affect the nutritive principles present with qualitative and quantitative changes.

Course Prerequisites


Elementary knowledge of organic chemistry and biochemistry/ food chemistry.

Teaching Methods


The first phase of the course is theoretical, while the second is on the application on specific supply chains.

Assessment Methods


Oral exam.
