Syllabus

Course Objectives

The objectives of this course include:
- the acquisition of knowledge relating to the classes of nutrients, notions on the chemistry of fermented products, on food preservation and on undesirable and toxic substances.
- the acquisition of fundamental knowledge on the main food-borne diseases and their prevention.
-Basic knowledge of instrumental analytical techniques applicable to the food sector.
-Ability to interpret and apply an experimental procedure for determining the composition or chemical-physical properties of a food product through laboratory activities.

Contents

description of the main nutritional elements, micro and macro elements, main chemical transformations caused by physical and microbial agents, study of the main foods that make up the Mediterranean diet, their industrial preparation and conservation, notes on aromas.
