Syllabus

Course Objectives

The course aims to provide adequate knowledge on the structural and physiological characteristics of microorganisms, on the variability of the microbial ecosystem in the environment and in the human host, on the types and use of antimicrobial drugs, on the microbiological tests and dosages of the pharmacopoeia and on the complex problems associated with drug resistance. In addition, adequate knowledge will be provided on the microbial species responsible for infections and food poisoning as well as waterborne diseases. Knowledge of sector legislation as well as laboratory activities will provide the student with the basis for working in a microbiology laboratory specialized in the environmental and/or food field.

Course Prerequisites

Human anatomy and Applied Biology for a better understanding of the course.

Teaching Methods

The teaching is structured in lectures according to the teaching calendar, classroom exercises and practical exercises in the laboratory. The lectures and laboratory activities include a strong interactive component between Teachers and Students. Attendance is mandatory.

Assessment Methods

The evaluation will be carried out through an oral exam aimed at verifying the state of preparation related to both general microbiology and applied microbiology. The questions will focus on the topics related to the program covered during the lectures and laboratory activities. The final assessment will take into account the knowledge and skills acquired in the field of General Microbiology and Applied Microbiology in the environmental, health and food fields. The final grade - expressed in thirtieths - will be the average of the individual grades obtained in the 2 modules.

Pearson To support and integrate the text, the teacher will provide additional teaching material (slides shown during class, recommended readings, videos, animations, webpages, etc.).

Contents

- Biological, structural and genetic characteristics of bacteria and viruses. - Role of microorganisms in different ecosystems, expression of their pathogenicity and virulence as well as survival strategies adopted in the host and in the environment. - Biological risk assessment and study of prevention, treatment and monitoring systems of microorganisms present in the environmental and food fields to limit and prevent the spread of infections as well as antimicrobial resistance in a One Health Approach. - Microorganism-host interaction: role of the human microbiota and characteristics of probiotics, prebiotics and postbiotics as food supplements. - Gene recombination. – Antimicrobial agents and dosage methods. - Main microbial species associated with foodborne infections and poisoning and waterborne diseases. - Microbiological control in the food and environmental fields (sector legislation). - Laboratory activities to provide basic knowledge related to the applications of microbiology in the food and environmental fields.
