Course Objectives

The course aims to introduce students to the knowledge of the structure and properties of food constituents, mechanisms of the main alteration reactions, indicators and criteria for the quality and safety control of food products, cooking and preparation methods to guarantee the nutritional content, taste and safety of foods.
